Mean Mother Chili

2.5 lbs ground beef
1 package of Chili Bob's Mean Mother Chili Mix
2 Tbs. vinegar
2 cans (14.5oz) of beef,chicken or vegetable broth

In a heavy soup pot brown beef, then lower the heat and add the entire package of Mean Mother Chili Mix and the 2 Tbs. of vinegar. Stir and let simmer for two minutes to release the flavors of the spices. Then add the two cans of broth, if you like, add undrained canned beans, tomatoes or corn and simmer for one hour. Serve and enjoy!

Lentil Chili

My daughter Alison, the vegetarian, came up with this winning recipe. Feel free to add any of your favorite vegetables.

1 pound rinsed dried lentils
3 cans chicken broth
1 can whole kernel corn or yellow hominy, un-drained
1 large can chopped tomatoes, un-drained
1/4 cup Chili Bob’s Mean Mother Chili Mix
Optional: 1 cup each diced potatoes and carrots

Rise lentils and check for any small stones. Place in an 8 quart stock pot. Add 3 cans of chicken broth and simmer covered for 30 minutes. Add diced potatoes and carrots at this time if desired. Add the rest of the ingredients, cover and simmer slowly for an additional 30 minutes or until lentils are tender. Serve with homemade corn bread.

Chili Ben’s Blazin Saddles Bean & Salsa Chili

I needed something for Chili Ben - part of my chili posse, along with his dad, Chili Dick - to do while our competition pot of chili is cooking. I came up with this recipe and it is great!

2 cans each (15-16 oz.) of black beans, pinto beans and dark kidney beans, un-drained
1 can whole kernel corn, un-drained
1 can (14 1/2 oz.) chicken broth
1 jar Chili Bob’s “Ohio’s Best!” Salsa
1 bag Chili Bob's Mean Mother Chili Mix
Chopped Green Onions

In a medium sized chili pot, put in all the beans and the chicken broth and bring to a simmer and cook 10 minutes. Remove from heat and using either a potato masher or the back of a large spoon, partially mash beans to thicken chili. Add all the Mean Mother Chili Mix, corn and salsa and return to a simmer for an additional 20 minutes. Ladle into bowls; sprinkle each with green onions. Makes 4 servings.

Fish Coating

1 cup yellow corn meal
1 cup Drake’s Fry Crisp Coating Mix
2 tsp. Chili Bob’s Island Fever Powdered Hot Sauce
1 tsp. each Chili Bob’s Garlic & Onion Lovers Seasoning
1 egg - beaten
1/4 cup milk

Mix all dry ingredients together in a 1 qt. zip lock bag. Blend egg and milk together. Rinse fish and pat dry. Dip fish in milk, shake off excess liquid, and place in bag. Coat well with seasoning. Fry fish in hot oil.

Special Burgers

This recipe for burgers has become a family favorite and is the only burger we make when we grill. These will be the biggest and moistest burgers you’ve ever
eaten. You’ve got to try them to believe it!

2 1/2 to 3 lbs. ground chuck
1 Tbsp. Chili Bob's Onion Lovers Gourmet Seasoning
1 Tbsp. Chili Bob's Garlic Lovers Gourmet Seasoning
1 medium baking potato, un-peeled, finely shredded

Place ground chuck and seasonings in a large mixing bowl. Shred potato using the small hole on a cole slaw cutter. Blend well. These burgers shrink very little, so don’t make them too thick. Grill or broil till medium done and not pink
in the middle. Enjoy!
